When we talk about gin, juniper is really the star. But something wonderful happens when we replace the juniper. But first, we need to explain what juniper berries are.

We’ll tell you a secret, junipers berries aren’t berries at all! They’re actually the cones of the juniper shrub. And you know what else has cones? Pines, firs, spruce and redwoods! Juniper, just like these other trees, is a cone-bearing conifer. And the cool thing about conifers is that most are edible and each has a unique aroma.

Why do we bring this up? Well, we are obsessed with conifers and for us juniper is just the beginning. Spruce, firs, cedars and the mighty redwood, are all conifers we want to put into our spirits.

Spruce Tip Martini

3oz Terrapin Spruce
1/4oz Dry Vermouth

Pour ingredients into mixing glass with ice. Stir well. Strain into chilled martini glass. Garnish with lemon peel.
