Recipe and Method

Seven botanicals make up this gin: Juniper, coriander, angelica root, cardamom, star anise, lemon peel and rose petals. Of these seven we chose rose petals, lemon peels, and star anise to highlight. All botanicals are macerated in our pot still overnight. On the day of distillation, we add more of these botanicals to our botanical basket for vapor infusion which allows us to draw out the more delicate aromas of the rose petals.

Tasting Notes

Subtle traces of sweet licorice unfold into lingering floral tones akin to newly bloomed roses, culminating in a crisp citrusy finish.
